how can i exclude some directories?

Hej,
i try to use your shell script. I'm using a TYPO3 v11.5, composer based and would like to save the backup outside of the installation, but i'm not sure how i'm can config. So i asked me, how can i exclude the backup directory.

You can specify the backup directory outside your website but this directory must have the unix right to be writable by your web server.

This parameter is in the task form.
