Custom fallback certificate for Traefik #4

User story
As an administrator,
I want to be able to customise the common name and other parameters of the default (fallback) certificate that Traefik will present,
So that details about the infrastructure are not exposed to clients when an ACME certificate is not provided.
Notes
- The default certificate that Traefik generates has "traefik" in its common name, I don't want that, I want to be able to set something else.
