Upgrade Storybook to v7 with Vite

Storybook released v7 which includes support for Vite. As we are migrating our projects to use Vite, we should also use it with this library to make sure everything is tested in the same environment.

We are behind in migrating from older versions of Storybook. They changed how stories are written a while ago but still support the older methods, which allowed us to upgrade quickly. Unfortunately, older methods don't work with Vite, so it'll take some time to rework all our stories.
