Allow runtime configuration of the verifier name and logo

When using the verifier to request proofs, the app uses the swagger api html page to find the name and logo of the requestor. These are currently hardcoded in the swagger docs and it requires a custom docker build to get the correct names to appear in the app. It would be great if this could be configured at runtime
